This sweet, juicy and crispy side dish will add bright holiday colors to the table.
Ingredients
For the Beets
- 1 Cup kale, thinly sliced
- 1 Cup raw red beets, match stick cut
- 1 Cup jicama, match stick cut
- 3/4 Cup raw apple, with skin, match stick cut
- 2 Tablespoon cilantro, chopped
- 1 lime, zested
For the Dressing
- 1/4 Cup plain nonfat Greek yogurt
- 1 Teaspoon ginger, fresh grated
- 2 Tablespoon honey
- 1/4 Cup sherry vinegar
- 3 Teaspoon yellow mustard
- 1 Tablespoon raw onions, minced
- 1 Teaspoon raw garlic, grated
- 1 Teaspoon dried tarragon, chopped
- 1 Teaspoon raw red hot chili peppers, minced
